A fun twist on a classic!
Made with two fan favourite flavours, this recipe is super easy to make featuring Chapman’s Markdale Creamery Vanilla Ice Cream and Bear Paws Chocolate Chip cookies. Add custom toppings, such as mini chocolate chips or crushed banana chips, for a special touch.
These Chocolate Chip Ice Cream Sandwiches are a tasty snack parents and kids can both agree on as they’re peanut/nut free and made with natural flavours and colours.

Gather ingredients. Unwrap all of the Bear Paws cookies. Optional: you can freeze these flat on a plate to make assembly even easier.

Open the carton of Markdale Creamery Vanilla Ice Cream, including the sides, so that it can be sliced.

Cut a ¾” slice off the short end of the ice cream. Cut that slice into thirds.

Place one section of ice cream between two Chocolate Chip Bear Paws cookies and press together gently.

Place on a plate or cookie sheet and freeze until ready to serve. Optional: you can make these ice cream sandwiches even more special with fun garnishes!

Some tasty garnish ideas: melting a small amount of dark chocolate and drizzling it on one side, adding a drizzle of melted chocolate and top with crushed banana chips, dipping one end into crushed banana chips/mini chocolate chips/chocolate sprinkles.
